Cafeaua Mocha autentica provine din Yemen si Matari este probabil cea mai cunoscuta varietate. Este din regiunea Bani Mattar, la vest de capitala Sana'a. Aceasta este o cafea crescuta la altitudini foarte ridicate, intre 2000 si 2200m peste nivelul marii, ceea ce face boabele sa fie mici, ferme si concentrate. Nu multe s-au schimbat de-a lungul secolelor in procedeul de cultivare. Asemenea altor cafele naturale, pulpa si pielea fructului sunt lasate la uscat cat sunt inca atasate de boabe. Odata uscate, coaja se inlatura cu o piatra de moara. Varietatea cultivata aici este una veche, cunoscuta sub mai multe nume, dintre care cel mai cunoscut este probabil Ismaili. Cei care isi prajesc cafeaua acasa pot experimenta cu aceasta cafea, intrucat diverse grade de prajire produc rezultate foarte diferite. Prajita usor, ea isi va releva caracterul acid. O prajire usoara pana la medie va produce textura de ciocolata si va descoperi arome ascunse. O nota mai mare de prajire, care la alte cafele incepe sa extompeze nuantele florale mai delicate, in aceasta poate aduce la suprafata profunzimi gustative deosebite.

Caracteristici in ceasca: intensa, exotica, acida, cu note de vin si textura placuta, fina, de ciocolata amara.

Cafeaua in Yemen este produsa asa cum a fost dintotdeauna, fara fertilizare artificiala, erbicide sau pesticide, rezultand intr-o cafea naturala, de top.

Authentic Mocha coffee is from Yemen and Matari coffee is perhaps it's best known. It is from the Bani Mattar region are located west of the capital city of Sana'a. This is a very high altitude coffee, grown between 2000 - 2200m, resulting in small, concentrated beans. Not much has changed over the centuries as to how Yemen coffee is processed. In the manner of all natural coffees, the fruit pulp and skin are left to dry while still attached to the beans. Once dried, the husk is removed using a millstone. The variety used in growing this coffee is ancient. The more widely known is Ismaili but there are many less familiar names. The home roaster can really play with this coffee as different roasts produce vastly different qualities. Roast it lightly and unevenly to accentuate the acidity and wild character. A city to full city will produce the chocolate texture on your tongue and awaken deeper, tangiers levels of development. Dark roasts, which often mask delicate flavors and floral notes in some coffees, can bring out hidden depth with this one. It will not taste like other dark roasted coffees unless you take it too far.

Cup characteristics: very fragrant. Wild, exotic, acidic, very winey, long finish, clean, tangy. Characteristic dark chocolate mouthfeel. Yemen coffee is grown as it has been for hundreds of years, without man-made fertilizers, herbicides or pesticides. Yemen produces trully world class coffee.
