Kopi Luwak vine din insulele Sumatra, Java si Sulawesi, care fac parte din cele 13.677 insule ale Arhipelagului Indonezian. Pe aceste insule traieste un marsupial mic, numic Paradoxurus in limbaj stiintific si Luwak de catre localnici, un animal ce traieste in copaci si apartine familiei civetelor. Vazuti de catre localnici ca animale de companie, ei se urca in copaci si mananca cele mai coapte fructe de cafea. Acestea trec prin sistemul digestiv al animalului si sunt in final excretate. Cativa localnici au avut idea de a aduna aceste boabe, ce trec prin procesul digestiv aproximativ intacte. Enzimele din stomacul animalului insa ii dau o savoare unica si distug din proteinele ce dau gustul amarui al cafelei. Acest proces produce rezultate vast diferite de procesarea cu apa. Este o cafea cu un gust complex si note neobisnuite, dulcegi si usor florale, datorate fermentatiei naturale produse in sistemul digestiv al Paradoxurului. Are un miros fad inainte de prajire, ce aduce a jungala, verde si umed, insa devine foarte placut prin prajire. Aroma este pamantie, intensa, cu o textura siropoasa si intensitate deosebita. Gustul incredibil si procedeul de productie cu particularitatile sale deosebite o fac cel mai scump sortiment de cafea la ora actuala.

Kopi Luwak comes from the islands of Sumatra, Java and Sulawesi, which are part of the Indonesian Archipelago's 13.677 islands. On those Indonesian islands, there is a small marsupial, called Paradoxurus in the scientific language and Luwak by the locals, which is a tree-dwelling animal and belongs to the Sibet family. Long regarded by the natives as pets, they climb among the coffee trees eating only the rioest, reddest coffee cherries. Afterhaving eaten these berries, the animal must digest and eventually excrete them. Some locals once got the idea of gathering the beans which come through the digestion process fairly intact, still wrapped in layers of the cherrie's mucilage. The enzymes in the animal's stomach, though, appear to add something unique to the coffee's flavour through fermentation. The stomach acids and enzymes are very different from fermenting beans in water. It is the most complex coffee with unsuala flavour due to the natural fermentation the coffee beans undergo in the Paradoxuru's digestive system. It smells musty and jungle-like green but it roasts up real nice. The falvour is earthy with a musty tone that is heavy bodied. It is almost syrupy with a unique aroma. It is an unbelievable taste in your mouth: richness, body, earthiness, smooth.
